Roasted Sweet Potato Fries

This is one of my favorite side dishes! Chewy outsides and creamy insides. A little salty and a little sweet. It can’t get better than these roasted sweet potato fries! Plus they are super easy to make!

First preheat your oven to 375-400 degrees depending on how hot your oven runs.

Start by peeling your potatoes and cutting them into long strips about a half inch thick. Skinnier fries will cook quicker and be more dry inside so keep that in mind and cut them to the thickness you enjoy. Put the fries in a bowl and drizzle with melted coconut oil or olive oil. Toss the fries to coat them in the oil. Sprinkle on whatever seasonings you like. Be adventurous and try different spices! I like salt, pepper and smoked paprika. Garlic and onion powder taste good too!

Next put a nonstick oven safe wire rack on a shallow pan. Lay your seasoned fries on the wire rack. Don’t crowd them too much. They cook better when there is a little space between them. Put them in the oven for 20 minutes. After 20 minutes check them to make sure they aren’t burning. If they are getting brown too quick, turn down the oven. Cooking them on the wire rack lets them cook on all sides and there is no need to turn them over! Keep checking them every 10 minutes. They are done once the centers are soft and the outsides are golden brown.

Sweet Potato Fries

Ingredients:

Sweet Potatos

Coconut (melted) or Olive Oil

Salt

Pepper

Smoked Paprika

Instructions:

Preheat oven to 375-400 degrees. Peel potatoes and cut in the long strips. In a bowl, toss fries with melted coconut or olive oil. Sprinkle on seasonings and toss to coat. Lay the fries on a wire rack inside a shallow pan leaving room between the fries. Bake for 20 minutes. Continue baking the fries until the centers are soft and the outsides are golden brown.
